And on the 6th day the big guy rested. Today was my first day of much needed rest. My body this morning had fallen and did not want to get up. Because of the rain (which meant my business was closed), I was able to lie in bed until 10:00 AM, my partner in crime aka Benny Boy was also feeling very lazy so I didn’t to get up to let him go pee until 11:00 AM.
I haven’t been this lazy in a long time; my house looked like a homeless soda crackwhore had taken up residence turning it into his soda crackhouse. I don’t even remember if I took a shower, or brushed my teeth. It was a purely Homer Simpson on the couch day. I watched “School Ties” on HBO, “Super Troopers” on Starz, and two episodes of “Top Gear” on my DVR, a day of intellectual development.
When I took Benny on his first walk at 2:00 PM I started to text my sister, and came up with the fantastic idea of inviting her and her family over for a “skinny diner”, WTF? Almost like the skinny guy in me wanting to find the right motivation to get me moving again, my subconscious pursued the only thing which could have gotten me up off the couch and cleaning my place up, invite family over for dinner.
The rest of the afternoon was a blur; I developed a menu with a few items out of the Biggest Loser Resort cookbook, including the Red Pepper Hummus, the Southwestern Soup, and Chocolate Covered Strawberries, and some of my own ideas to round out the meal, a cod fillet with a Mesquite BBQ dry rub, salad, and a brown rice mixture with roasted red peppers, and corn. With recipes in tow I went to Whole Foods, stocked up, got back to my kitchen and began my mad session of alchemy.
The Red Pepper Hummus could have turned out better if I used less garlic. Southwestern Soup is actually really good, the recipe is very simple. The ingredients include Vegetable Stock, Zucchini, Green Onions, Corn, Red Peppers, Kidney Beans, Brown Rice, & Ground Turkey. There are a handful of simple seasonings which are almost certainly regular pantry items. It only takes 10 minutes to cook, and surprisingly tastes like normal food. The fish I made was even easier to make I applied the dry rub, and then put in the oven with broil function on for 12 minutes. In that time the Cod comes out perfectly.
My first attempt at making chocolate covered strawberries turned out surprisingly well, I put together a double broiler with a pot, and a soup bowl then placed a handful of dark chocolate chips in the soup bowl. The chocolate melted quickly, once it had a nice even consistency I was able to drag the strawberries across the bowl and cover them with a nice sheen. I placed them in the freezer for about 30 minutes and they came out pretty well. I of course then read in the recipe that you are supposed to place them in the fridge for 1-3 hours to harden the chocolate without freezing the strawberries, good job smart guy.
After my family left for the evening I took Benny on a 1.7 mile walk, the walk was cut short because as I was walking him I was caught in the middle of a torrential down pour. The rest of my evening was spent cleaning up, and the remnants of my alter ego squatter were gone.
I haven’t had a day like this in a long time, especially a lazy day like this where I didn’t gorge myself on food.
